Palate: Fresh, crisp, with persistent fine bubbles. Snappy, fresh apple and almond. Great acidity. Finishes with lemon curd and chalk

Winemaking Notes: Organic fruit, average vine age of 40 years. Champagne method, lees aged for 18 months

Producer Notes: The Chateau was built in 1791, and purchased by the current owners in 1878. Bertrand Guilhem is a 5th generation winemaker. Organic and biodynamic wines

Area Notes: Malapere is the most westerly region in the Languedoc. Despite proximity to the Mediterranean, there is a fair amount of influence from the Atlantic. Atypical soil for Languedoc: lots of calcareous sandstone
