Palate: Dry, with lively acidity. Mineral and creamy, with a long, delicate finish. Notes of green apple, honey, white peach, hay and citrus
Winemaking Notes: Hand harvested, fermented in stainless steel using indigenous yeasts, aged 12 months on fine lees
Producer Notes: Relatively young producer for the area, with 30 year old vines farmed on pure Kimmeridgian limestone. Focused on quality wines farmed in an environmentally friendly manner.
Area Notes: Chablis is the northernmost area of Burgundy, and produces cool-climate Chardonnay wines, usually known for a flinty characteristic and for higher acid, less fruit forward wines than are grown in the rest of Burgundy. Chablis wines are mainly grown on ancient Kimmeridgian limestone, which imparts a great deal of this mineral, flinty characteristic
