Nose: Fresh pineapple, apple, pear, lemon curd. Somewhat oxidative.
Palate: Fresh, citrus and mineral driven, slightly saline with lovely acidity. Lightly frizzante, almost cider like. Cantaloupe, eucalyptus, thyme.
Winemaking Notes: Organic, hand picked, herbicide free. Biodynamic practices. Two vineyard sites. 35-40 year old grapes. Spontaneously fermented in fiberglass and concrete, aged 8 months on lees. Unfined, unfiltered, minimal sulphur
Producer Notes: 2 brothers, both born and raised in Cadiz. Studied chemistry together, and decided to attempt to showcase wines from their region (specifically focused on reds to start). Have a small vineyard in Jerez.
Area Notes: Jerez is most widely known as the area of production for Sherry. It has a reliably moderate climate with warm winds blowing in from the east, and cooling breezes coming off of the ocean. The region is known for its white, reflective Albariza soil, excellent for growing the Palomino grape.
