
Beautiful little natural wine from a newer Ontario winery. Lots of wild yellow fruit: open slowly!
Nose: Pretty and floral, citrus and yellow orchard fruit
Palate: Golden delicious apple, raw almonds, quince and candied bananas. Big, juicy, energetic bubbles
Winemaking Notes: Organically farmed, hand harvested grapes, whole-cluster fermented with natural, wild yeast. Fermented 21 days in concrete egg, then finished in bottle. Unfined, unfiltered, 100% malolactic fermentation
Producer Notes: Tiny virtual winery run by some excellent Toronto industry folks, making low intervention, high quality wines from fantastic Ontario varietals
Area Notes: Four-Mile-Creek is the fertile plain that makes up central Niagara-on-the-Lake. Its topography gives it abundant sun exposure and warm days: it is the most productive sub-appellation in the Niagara Peninsula
