Nose: Floral notes of violet and rose, with dark fruit, some light baking spice and black pepper

Palate: Full and structured, yet balanced by a touch of freshness. Big, generous fruit, with cocoa, tobacco, and some fennel

Winemaking Notes: Organic and biodynamic, hand harvested, fermented with natural yeasts, aged for 1 year in old neutral oak barrels, bottled unfined and unfiltered with minimal sulfur.

Producer Notes: Matthieu Cosse and Catherine Maisonneuve started this small wine-making project in 1999. They currently own 15 ha of biodynamically and organically farmed grapes, over a variety of soil types that all wonderfully express Cahors wine.

Area Notes: Cahors is located within the broadly named Sud-Ouest area of France, south of Bordeaux. They make big, dark, full bodied reds that must be at least 70% Malbec, with the rest of the blend typically consisting of Merlot and Tannat. It has hot summers and wet winters.
